These alternative bangers are pretty spectacular with a much deeper flavour than your classic porky.
The venison which we use is wild which gives it a deeper gamey taste compared to farmed varieties. The taste even varies by the season as their diet changes from plants, fruit, nuts and acorns in the warmer months to grass and evergreen plants in winter. Seasonal, so snap up these sausages while you can!

Fill a roasting tray almost to the brim with a variety of small, baby tomatoes, whole garlic cloves, rosemary and sage. Generously pour on olive oil, a splash of balsamic and pop sausages on top and cook for 1 hour at 180C. Serve this gooey goodness with heaps of warm crusty bread.
