Our butchers prepare skin-on duck leg quarters which contain both the upper and lower parts of the leg.
With the skin still on and bone in, these leg quarters are a cinch to cook. The bone guarantees effortlessly even cooking and the skin keeps everything wonderously moist.
All of our butchers use Aylesbury ducks, one of the few native free-range British duck breeds remaining. By rearing these ducks naturally at their own pace (unlike continental ducks), the birds develop a sweet, rich and gamey meat which is bursting with flavour.
