The equivalent of a beef ribeye, this cut is taken from the rib section of the loin. Dry cured, like a gammon steak, which results in tender steaks with an amazing sweetness. With slightly more fat marbled through the meat than a gammon steak, the bacon ribeye has incredible flavour.
Our farmers' outdoor-reared, native breed pigs develop an intense flavour and a lovely, healthy natural layer of fat as they mature at their natural pace.
Native breeds include Gloucester Old Spot, Cornish Black, Berkshire, Tamworth and Blythburgh.
