The leanest, most tender lamb cut you will find. The cannon is taken from the eye of loin side, but is boned and trimmed of all fat. It has the texture of a tenderloin and is best cooked quickly and served pink. This is bound to impress at dinner parties for its delicate and sweet flavour.
Our farmers' lambs are all native breed, outdoor reared and bred, free range and solely grass fed.
Native breeds include: Lleyn, Dorset, Jacob, Shetland and Suffolk.
