Rib-eye steaks with button mushrooms in sage Butter

Rib-eyes are an incredibly tasty steak, benefiting from the tenderness of being protected by the ribs combined with having an unbelievable flavour with rich marbling throughout.

Ingredients:

4 x Heartier ribeye steaks
150g button mushrooms
60g unsalted butter
12 x shredded large sage leaves
1 tsp lemon juice
1 tbsp horseradish sauce
1 tbsp vegetable oil
Salt and ground black pepper

Method:

1. Melt the butter in a large, heavy bottomed pan
2. Slice the button mushrooms in half and fry in the butter for 1-2 minutes
3. Turn down the heat and stir in the sage seasoning with salt and pepper
4. Stir in the lemon juice and horseradish & cook for one minute
5. Remove from pan and keep somewhere warm
6. Wipe the pan with kitchen paper, add and heat the oil to a high temperature
7. Cook steaks to your preference
8. Serve the steaks, pour over hot sage butter and garnish with the mushrooms and serve with potatoes or home-made chips
