Souvlaki Spatchcock chicken

Serves 4

Heartier spatchcock chicken

For the marinade

3 tbsp olive oil

3 tbsp lemon juice

3 tsp dried oregano 

2 cloves garlic rough chopped 

3/4 tsp chilli or cayenne pepper

3/4 tsp cumin powder

1 heaped tsp smoked paprika 

Good pinch of salt and pepper


  1. Mix the marinade ingredients in a blender for 45 seconds.
  2. Brush the marinade onto all sides of the spatchcocked chicken, reserving some for later (marinades will always be best if left to do their work overnight, but this marinade is still delicious if you roast straight away).
  3. Preheat your oven to 200C, place the chicken upside down in a baking tray and roast for 20 mins.
  4. Remove the chicken from the oven and turn breast side up. Brush the remaining marinade over the top and put back in the oven for 30 minutes (always check the juices run clear to ensure your chicken is cooked enough).
  5. Serve immediately.
