Bavette steaks

BBQ Grilled Bavette Steaks with Salsa Verde

Serves: 2

Cook time: 10 minutes

Total time: 30 minutes


Heartier bavette steaks

50g Flat leaf parsley

25g mint leaves

25g basil leaves

Juice of 1 lemon

½ tbsp of dijon mustard

2 cloves of garlic

2 tsp capers and the liquid that comes with it

3 anchovies

75ml white wine vinegar

100ml olive oil

Salt and pepper


  1. Start heating a BBQ, use a charcoal starter chimney to speed this process up (if not using a BBQ, heat a frying pan over a medium-high heat here)
  2. Place the herbs, mustard, capers, garlic, anchovies, garlic, white wine vinegar and olive oil into a blender and process until you have a smooth sauce. If not smooth enough, add more olive oil until it is. Season to taste
  3. Rub the steaks with some olive oil - this will help to stop them from sticking to the BBQ. Season with plenty of salt and pepper
  4. Once the BBQ is white hot with no flames, place the steaks on the grill for 3-4 minutes either side, remove and allow to rest for at least 5 minutes
  5. Slice the steaks against the grain and serve on a base of the salsa verde
