Duck Breasts in Cherry Sauce

Serves 4

Total time: 25 mins


4 Heartier Duck Breasts
Knob of butter
150ml red wine
150ml water
150ml cranberry juice
5 tbsp cherry jam
2 tsp balsamic vinegar
3 x fresh thyme sprigs
1 tsp cornflour
Salt and freshly ground pepper


1. Add the wine, water, cranberry juice and jam into a saucepan and boil for 5 minutes
2. Add the vinegar, thyme and cornflour and boil for 3 minutes
3. Whisk until smooth and season with salt and pepper
4. Set aside and keep warm
5. Heat a frying pan to a high temperature and meanwhile spread the butter on each side of the duck breasts
6. Brown the duck the duck breasts skin side down for 7 minutes, flip and fry for 3-4 minutes (medium rare)
7. Rest for 5 minutes, slice thinly and pour sauce over
