Porkbelly apple

Apple & cider pork belly

Serves 6

Cook time: 2 – 2½ hours
Total time: 2 hours 45 mins


1kg Heartier pork belly
1 tsp sea salt
1 tbsp olive oil
2 x cored, peeled and quartered apples
100ml dry cider


1. Heat the oven to 220C
2. Remove the pork belly from the packaging and pat the skin dry
3. Your Heartier pork belly will come scored, so just pop it in a deep baking tray and rub the oil and salt into the skin
4. Put the pork belly straight into the oven for 30 minutes
5. After 30 minutes remove the pork belly and turn the oven down to 160C
6. Pour the cider and add the apple quarters into the baking tray
7. Put the cider and pork belly back in the oven for 1½ to 2 hours until the crackling is crisp
8. Remove and allow to rest somewhere warm, slice and serve
