Fillettail rocket

Free-range fillet tail with garlic mushrooms and rocket

Heartier Fillet tail pieces
100g button mushrooms
2 large garlic cloves, crushed
Knob of butter
Olive oil
4 handfuls fresh rocket


1. Heat the oven to 230C
2. Meanwhile, finely chop mushrooms 
3. In a heavy based pan, heat the oil to a high temperature
4. Sear the fillet tail on all sides for 2 minutes
5. Transfer to the oven and cook for 3-4 (medium rare)
6. Remove from oven and allow to rest somewhere warm for 10 minutes
7. Meanwhile, melt the butter, along with a dash of olive oil and add the garlic and mushrooms
8. Fry for 5-6 minutes and remove from heat 
9. Make a bed of rocket and top with the mushrooms 
10. Thinly slice the fillet tail and serve over top of mushrooms
