Garlic, Mint and Rosemary Rack of Lamb

Perfect for dinner parties, this looks impressive and tastes great

This simple and classic rack of lamb recipe is bound to impress guests over the Christmas period, and it's a lot easier than it looks!

Rack of Lamb
4 cloves of garlic
Big handful of rosemary
Zest of a lemon
Juice of half a lemon
Olive oil
Handful of mint leaves


1. Blend the garlic, rosemary, lemon, mint and olive oil together
2. Put the lamb in a big sealable bag and add the mixture
3. Leave to marinate in the fridge over night
4. Brown the lamb on a hot pan
5. Place in a roasting pan and cook in at 180oC for about 20 minutes
6. Leave to rest for 10 minutes after cooking

* Tip * Serve with some creamy mashed potato and green beans
