Venison Haunch steaks with redcurrant sauce

Serves 2

2 Heartier Venison haunch steaks
1 tbsp olive oil
Salt & freshly ground pepper
45ml red wine
1 tbsp redcurrant jelly
1 tsp dijon mustard
4 tbsp crème fraiche


1. Heat the oil in a pan
2. Meanwhile season the steaks generously with salt and pepper
3. Fry the steaks for 3 - 4 minutes each side (Venison should be slightly pink in the middle - overcooking them will make them dry)
4. Remove the steaks from the pan and allow to rest somewhere warm
5. Add the wine to the frying pan and stir in any bits in the pan. Simmer for one minute
6. Add the redcurrant jelly and stir in
7. Finally, add the creme fraiche and mustard and heat through
8. Pour the sauce over the steaks and serve immediately
