Heartier's Honey Glazed Ham

A classic ham added to by the delicious sweetness of a honey glaze.

At home as the star roast or as a cold cut - a versatile and delicious dish where the leftovers will be fought over.

1.4kg Heartier horseshoe gammon
1 onion
1 carrot
1 bay leaf
Fresh parsley
Black peppercorns
2 tablespoons honey or maple syrup
1 handful cloves


1. Soak the horseshoe gammon overnight to remove excess salt
2. Once drained place the joint in a large saucepan of cold water and add the onion carrot, bay leaf, parsley and peppercorns and slowly bring to a simmer. Cover the pan.
3. Simmer for 20 minutes per 450g (note – do not boil as this can dry the ham out). Meanwhile, heat the oven to 220C
4. Remove the joint from the saucepan and carefully trim off the skin, leaving a nice coat of fat. Keep hold of the liquid in the pan
5. Spread the honey or maple syrup generously over the fat
6. Score the pork in a diamond pattern with a sharp knife
7. Ensuring all the honey is nicely rubbed in, pop your cloves into the score lines
8. Bake the joint for 20 minutes, fat side upwards
9. Carve into thick slices and serve
