1. Heat the oven to 180C.
2. Generously rub oil over the lamb.
3. Toss the vegetables in olive oil and season with salt and pepper.
4. Spread the vegetables in a deep baking tray and place the lamb leg on top.
5. Place in the oven and cook for 1 hour.
6. Remove the lamb from the oven and allow to rest for 10 minutes. Keep the vegetables somewhere warm, or if preferred cook while the lamb rests.
7. Slice lamb and serve over the vegetables.
