Speedy Sausage Risotto

A great use for leftover sausage, cooked in under 30 minutes

We’re always thinking of new ways to use leftover food, and a risotto is a great little dish that can be adapted for your leftover ingredients. Risottos can be thought of as time-consuming, heavy recipes, but if you use long grain, or even basmati rice, instead of a classic arborio rice, you can whip one up in no time.

Leftover cooked sausages
140g rice – long grain or Basmati for a quick version
1 pint of stock
1 small chopped onion
A glass of white wine
2 tbsp cider vinegar
1 - 2 garlic cloves, finely chopped or from a garlic press
A sprinkling of dried thyme (or oregano)
Vegetables – mushrooms and peas work well with sausage


1. Heat some oil in a pan, and add your rice (about 70g per person). Cook on medium heat until starting to turn translucent
2. Add the onion, and cook for another 3 mins, stirring frequently. Add your garlic, and cook for another minute
3. Add the wine and vinegar, cook until mostly absorbed, then add half the stock. Cook for about 5-10 mins
4. Add the remaining stock, your chopped up cooked sausage, herbs, salt and pepper, and any vegetables
5. Simmer for a further 5-10 mins until the liquid has been absorbed, your vegetables are cooked, and the rice is al-dente or fully cooked through

* Tip * Most leftover meats lend themselves well to a risotto - try using the following substitutions

To replace the sausage, thyme and cider in the recipe above, try

  • Chicken ... tarragon... and juice of half a lemon
  • Lamb ... rosemary ... and white wine vinegar
  • Pork ... sage ... and cider vinegar
  • Beef ... coriander.. and chilli (fresh works best)
