Peppered Sirloin Steaks with Madeira

Delicious and warming steak recipe with a Madeira sauce

4 sirloin steaks​
1 tbsp mixed dried peppercorns (pink, black and green)
1 tbsp olive oil plus extra for frying
1 garlic clove crushed
4 tbsp Madeira wine
90ml beef stock
150ml pint double cream


1. Finely crush the peppercorns using a pestle and mortar, or a sturdy bowl and the end of a rolling pin
2. Place steaks in a non-metallic dish, add the oil, garlic and Madeira. Cover and leave to marinate in a cool place or in the fridge for 4 – 6 hours (or overnight if you have the time)
3. When you are ready to cook, take the steaks out of the bowl but don’t discard the marinade. Brush a little vegetable oil on the bottom of your frying pan and heat the pan until it’s hot
4. Fry the steaks over a high heat for 3 to 4 minutes per side for medium-rare. Remove the steaks from the pan and rest
5. Add the reserved marinade and the stock to the pan and leave to bubble until it is well reduced
6. Add the cream to the pan, season to taste and stir until the sauce has thickened slightly
7. Pour the sauce over the steak and serve with plain boiled potatoes and steamed green cabbage
